Ingredients

  • 1 (4 oz.) 1 (120 g) red bell pepper, in thin slicesred bell peppers, in thin slices
  • 1 (4 oz.) 1 (110 g) yellow onion, in thin slicesyellow onions, in thin slices
  • 2 tbsp 2 tbsp butter
  • 1 lb 450 g chorizo or other good quality sausage
  • 1 oz. (4 tbsp) 28 g (60 ml) sun-dried tomatoes in oil, preferably in olive oil
  • 1 tbsp 1 tbsp Dijon mustard
  • 2 tbsp 2 tbsp tomato paste
  • 2 tbsp 2 tbsp dried thyme
  • 1 cup 240 ml heavy whipping cream
  • salt and pepper

Fried cauliflower and parsley rice

  • 1½ lbs 650 g cauliflower
  • 2 oz. 55 g butter
  • 4 tbsp 4 tbsp chopped fresh parsley

Making low carb simple

Instructions

  1. Fry or grill the sausage until fully cooked through, put aside to cool a little.

  2. Fry the pepper and onion in butter in the same pan used for the sausage on medium-high heat.

  3. Cut the sausage into bite-sized pieces and add them back to the pan with the vegetables. Stir and fry for another minute.

  4. Add all remaining ingredients. Bring to a boil, lower the heat to medium-low and let simmer and thicken for about 10-15 minutes. Salt and pepper to taste.

  5. Serve with fried cauliflower and parsley rice.

  7. Shred the cauliflower using the coarse side of a grater. You can also use a food processor, just stop in time so you don't end up making it too finely shredded.

  8. Heat up a large frying pan and add butter. Fry the riced cauliflower on high heat for a few minutes while stirring it. Salt and pepper to taste. Add chopped parsley and mix before serving.

Tip

You can use strips or cubes of beef or chicken instead of sausage. This may require additional seasonings like garlic and paprika, as the spices in the sausage adds to the flavor.

    What? This is not stroganoff!!!! Since when does Russian stroganoff contain chorizo sausage, bell pepper, tomato paste, dried tomatoes and thyme?!?!?!

    You took a perfectly good classic LCHF dish, and added carby foods to it. Bizarre! Why would you do that?!?!

    By no means do we claim this to be an authentic stroganoff. This is, as it says in the description, a take on the classic version. It does have more carbs to it and is therefore best suited for people eating low carb in a moderate or liberal way.

    I agree, Apicius.
    The true stroganoff is already LCHF and keto as well. It's an awesome dish I prepare all the time in the slow cooker. This sausage dish is too carby for me, but could be better if, instead of trying to emulate stroganoff, you simply fried up the sausage and then added a cream and pesto sauce to them (like the sauce used on your hamburger + feta cheese dish).

    Here's the recipe:
    Sausages, 1 cup heavy cream, 2 tablespoons tomato pesto.
    Fry sausages thoroughly. Remove from the fry pan. Turn heat low and add the cream and pesto. Cook until it thickens. Pour over sausages. Serve with fried cabbage or butter-roasted cauliflower. Simple and delicious and totally LCHF.

    Ok, so its not authentic, they never claimed it was.

    I made this tonight using small french toulouse sausages (100% meat) and it was delicious! I did not add the sun dried tomatoes, so added small spoon extra of tomato paste.

    Very rich and satisfying. Will definatly make again.

    No matter how I add them the carb count given is too high. Could you please give me a list of where carbs are. 16 grams for one serving is almost a whole day's worth. Sounds delicious but definitely needs tweaking for me to eat.

    no need to add 2 onions, 1 will do just fine... With 2 medium-sized onions, the stroganoff itself is somewhere around 10 net carbs, which is still chunky for a ketogenic lifestyle. With only 1 onion, it drops to around 8.5 net carbs.

    It might not be Stroganoff in the true sense of the word but it was an extremely delicious meal. We didn’t have any cauliflower to hand so I used sautéed Zoodles instead of the ‘rice’ and the whole thing was speedy to make and so tasty. My non-Keto hubby is really getting into this way of eating, lol. Definitely another one for the weekly meal rotation. Thank you Diet Doctor.

    This was delicious! I made it with mild Italian sausage and served over spaghetti squash rather than the cauliflower rice. I’m glad I made leftovers because I’m dreaming about it.

    That certainly sounds delicious! Especially if you are dreaming about it! :)
    Keep in mind that the spaghetti squash does increase the carbs a bit.
