How to Make Chicken Stuffing Casserole in an Electric Pressure Cooker
Aunt Lou here.
I saw a meme the other day that said, “Being an adult is saying “After this week things will slow down a bit again” to yourself over and over until you die”. How true is that?! And with how crazy things have been here lately, Momma needs as many quick, easy and yummy recipes she can get! Otherwise, my family might not get fed! 😉 I’m guessing the same thing is going on in your house too. (If you want to make this delicious recipe in your crock pot, you can find the recipe here.)

Ingredients
- 11 Chicken Tenderloin Pieces
- 1 teaspoon Poultry Seasoning or to taste
- 10.75 oz Can Cream of Celery Soup
- 6 oz Box Stove Top Stuffing
- 2 Cups Chicken Broth
Instructions
In a bowl mix stuffing and broth together and set aside.
Pour 2 cups of water into the bottom of your 6-quart Instant Pot and place the trivet inside
Place tenderloin pieces in the bottom of a heat safe 2.5 quart bowl that will fit inside your Instant Pot insert
Sprinkle poultry seasoning over tenderloins.
Pour soup over chicken and spread evenly.
Once stuffing has absorbed all of the chicken broth pour evenly on top.
Place your 2.5 quart bowl on your trivet
Seal and cook on high pressure for 15 minutes and natural release with warming turned off.
Notes
- I used cream of celery soup in this recipe, but you could use cream of chicken or mushroom if you’d rather.
- I used chicken tenderloins, but you could use chicken breasts instead, just make sure your chicken is cooked through before serving.

Do you think it would be fine to mix all ingredients like you suggested and “dump” into the instant pot if I don’t have a heat safe bowl to fit inside?

Hi NIki!Without the liquid in the bottom to bring the instant pot up to pressure, I am afraid it wouldn’t work. I would also be concerned with getting the burn notice. However, I think you could take some aluminum foil and make a “bowl” to set on your trivet. Hope that helps! If you give it a try, let me know how it goes!

I haven’t tried this recipe with frozen chicken. I think it might work. You will need to extend the cooking time. Without trying it first myself, I can’t give you an exact time. Make sure you watch it closely the first time you make it and use a meat thermometer to check your chicken before eating. If you give it a try, let me know how it goes!

How many pounds of chicken?

It would be around a lb and a half. I usually use one of the long trays of tenders. Enjoy!
