Beauty and the Beast will always have a special place in my heart. I loved the movie as a child myself, and a few years ago my son played Chip in a local production of the musical. As a tribute to this charming movie, I am sharing the recipe for the iconic dish from the movie: the Grey Stuff! This Disney copycat grey stuff recipe replicates the taste of the dessert you can get at the Be Our Guest restaurant in the Magic Kingdom.

In the song “Be Our Guest” from the classic Disney movie Beauty and the Beast, Lumiere suggests that Belle:

Try the gray stuff, it’s delicious!
Don’t believe me? Ask the dishes!

When my son was in the musical version of the show, he got the “it’s delicious!” line which was very exciting for him.

While the actual grey stuff in the movie is not described other than being delicious, guests at the Be Our Guest restaurant in Orlando’s Magic Kingdom can order the grey stuff to taste it for themselves. When we visited Disney, my daughter had just turned five. The waitress brought her a portion of the grey stuff with a birthday candle in it as well as a birthday card from the Beast. She could hardly breathe.

The grey stuff is basically a creme patisserie flavor with crushed Oreo cookies. The custard gets the delicious Oreo flavor and its signature grey color from the cookies. And it is indeed delicious.

HOW TO MAKE COPYCAT GREY STUFF AT HOME

While you can take a shortcut to the grey stuff by using instant pudding mix, this recipe will have you making a basic creme patisserie. Although it sounds fancy, creme patisserie is just pastry cream and making one is a great tool to have in your toolbox.

Begin by whisking one egg together with the sugar until it’s pale yellow and frothy.

Add in the flour and cornstarch and whisk it all together until it’s well combined. Place the bowl with the mixture of the egg and dry ingredients on a kitchen towel on the counter or a table. The towel will keep the bowl from moving around while you temper this mixture later.

Pour the milk into a medium saucepan or pot and place it over medium heat. You want to bring the milk just up to a simmer, then remove it from the heat.

Now you need to temper your eggs. You are going to stream about half of the warm milk into the egg mixture with one hand while whisking continuously with the other hand. You can do this! Keep whisking while introducing the warm milk into the eggs to keep those raw eggs from scrambling. Once half of the milk is in the egg mixture, you are done. You tempered eggs!

Pour the milk and egg mixture into the pot with the remaining milk. Place the pot back over medium heat.

Bring the mix in the pot to a boil, and let it boil for 3-4 minutes. The custard should begin to thicken up as it cooks. Remove the pot from the heat, transfer the custard into a bowl, and allow the custard to cool.

Blitz up a package of Oreos (both the cookies and the cream) in a food processor or a blender. Stir the Oreo crumbs into the custard until homogenous.

In a separate bowl, whip heavy cream to soft peaks. When you scoop a bit of the whipped cream onto a spoon and hold it up, the peak of the cream should flop over. That’s when you know you can stop whipping.

Use a spatula to gently fold the whipped cream into the custard mixture in a large mixing bowl. This will keep the whipped cream light and airy.

I will give you a few options for how to serve the grey stuff toward the end of this post. Simply piping the grey stuff into a bowl and topping it with edible sugar pearls is a pretty good replication of what they do at Walt Disney World!

You can make the grey stuff up to a day in advance. Because it may tighten up more as it sits, you might want to pipe it into your serving containers before refrigerating it. Chill it in the refrigerator until serving.

Ingredients

  • 2 cups milk
  • 1 T flour
  • 2 T cornstarch
  • 1 egg
  • 3/4 cup heavy cream
  • 1 package of Oreos
  • 1/3 cup granulated sugar
  • pearl sprinkles optional

Instructions

  • Whisk egg and sugar until pale yellow.

  • Add flour and cornstarch to the mixture, whisk until combined.

  • Pour the milk to a medium pot, and place it over medium heat.

  • When the milk reaches a low simmer remove the pot from the heat.

  • Slowly stream half of the warm milk mixture into the egg mixture, whisking constantly to prevent the eggs from scrambling.

  • Add the tempered egg mixture into the pot with the milk, and place the pot back on the heat.

  • Whisk the mixture until it boils.

  • Boil for 3-4 minutes then remove the pot from the heat and allow the custard to cool.

  • Use a food processor or blender to grind Oreos into fine crumbs.

  • Using a hand mier or whisk, beat the heavy cream until it forms soft peaks.

  • Combine cooled custard and Oreos.

  • Using a spatula, fold the whipped cream into the Oreo mixture.

  • Pipe the mixture and then refrigerate until serving.
